For the last stage, just stand in the bottom left corner as a mage and spam fireball. It will kill everything on the other side of the screen and you won't even get hurt.
To get the gem in the level with the thief, you have to go back and replay the first level that the thief was in and kill him....then he won't be in the other level with the gem.
