The ragdolls turn on fire at 150 degrees? What are these things made of?!

They burn at 100°C and freeze at 0°C purely for balancing reasons. It's just way simpler to balance all items around the triple point of water instead of researching appropriate real life temperatures for items, making sure they work properly, and whatnot. For example, skin has been reported to ignite at like 1400°C irl, so that's reeeeally not too feasible if you want to set something on fire using a lighter for example.
