For level 14, one possible, but tricky to time, solution is to eat the first bat while slightly above it to be able to stomp the next bat, up to the last bat to stomp that one to get to the skull and deactivate the ghosts. Then hop down, eat the bat that is under the platform to get to where the ghosts were blocking before and stomp jump up to Sleepy Knight.
For level 15, stomp past the first ghost as it gets out of the way of the middle area and stun it on the way down. Then go to where the bats are and wait on the lower platform for the space between the bats to open up and stomp jump up to eat the left bat, stomp before hitting the spike wall and deactivate the ghosts. Then run to the far wall, hop up to the higher platform, stomp up to bounce off the bat up to the Sticky Sorcerer.

Nope - the game never deliberately resets anyone's progress; updates shouldn't either. Hopefully today's update makes vanishing-saves less common.
