why do some planets have 0% population growth

Because they are not supposed to grow population naturally (you can still construct buildings to increase the growth). You should ignore population though, as it is unlikely to remain in the game

Just unloaded a lot of resources on Lone Nassau - noting showing there. Still no options to build under extraction tab. All other tabs have building options.

Just conquered Lone Nassau - no options to build anything on the Extraction panel. Is this a bug?

You need Vulcanology research to unlock buildings on Lone Nassau (that research will become available as soon as you conquer it)

Is it not possible to capture enemy fleets anymore?

Maybe this is in the game and I can't find it... but I would like to be able to look at each resource on it's own. So Iron for example. I'd like a page that shwed me a breakdown of how much Iron is produced y each planet and how much of it is used and how much is exported and what the surplus is.

It is in the game indeed. Click the planet icon on the top bar (at center-right) and it will give you the list of planets that you can expand to see production sorted by resources and buildings

A commodities screen would be great. It would list each commodity (obviously) and when you clicked on it the drop down menu would list the plants and show what each planet made, sends and receives of each commodity. Other than that I'm loving the game, would love to know how I could get better and making faster progress.

You should check the little planet icon in the top bar (near the galaxy icon). You can then click on "show resources" to see an overview of resources
