@keep it simple: you lose your speed because you jump off the water vertically. The more horizontal you jump, the faster starslides you get

ive been up there over 20times...the most luck is needed when jumping up for the 1st starslide for the 1st time. If i grab it before 45sec or so, i usually get to the restaurant aswell.
