Great game, really enjoyed it - but can I ask what is actually happening when the fish get enough water?

I confess when I began and saw "Sir" and "Madam", my heart sunk a bit. I actually despaired a little at the stale prescriptiveness of it. But when I saw "Sir and Sir", I felt like cheering. Great job! <3

I'm still really stuck with getting the third star in the Misplaced Cave - tapping the down key when I land on the final platform before the impossible jump seems to slow me down, not speed me up :/ Any tips?
