For opening new levels you will have to always reach a certain number of stars whose number depends on your score in every round. More score = more stars.

Touching AI kills you, no explanation on how to score 3 stars on levels. I assume by logic it is the amount of gold coins you collect, which are limited to a set amount and AI is blowing them up, so that system doesn't work.

Yes, you are partly right. For getting three stars you must reach certain score (by collecting coins and killing enemies). Enemies can collect coins too, which is also good, because for opening certain bonus levels you must reach enough stars. This forces a player play some levels again and again until he gets enough score. Personally I think, this is great, I have not like easy games :). But yes, I agree that this is missing in description. I will add it :).
