What do you like to hear when you’re learning from a Tutorial?

Nothing with words. If you have music playing, even if it’s from a very popular band like the Beatles or AC/DC or something, it’s only going to come across as distracting. You’ll be fighting for the viewer’s attention in that case. Same thing with some of the louder dubstep or electronic stuff — loud screeches or too much “wubwub”, I guess I’d call it, distracts me unless the music is the focal point.

For music, I like “big band” stuff like jazz or swing to go along with tutorials. It has energy to keep the viewer awake, but is subtle enough to hide underneath someone’s speech and not get in the way. (I also like it when listening to livestreams of people working or playing games, because I get to enjoy the music and their talking while I do my own work.)

But for me it’s just as equally important that the person speaking on the subject has both good presentation AND is knowledgeable. No sense finding the perfect song if the person is going to stutter, or has the tutorial filled with “ums” and “ahs”. Sound confident and explain what you want to talk about in simple terms without making the viewer feel talked down to, and in my opinion, you’ll find yourself with a much better tutorial than a good song under your voice is going to provide. Hell, present it confidently enough and without large gaps of silence, and you may not even need music.

By Tutorial, I’m talking about an In-Game Tutorial.

In-Game tutorial? I assume for that you mean, like. . . “To do X attack, press blahblahblah”? Or explaining mechanics like setting up/upgrading turrets in a tower defense?

No matter the case, the above still applies for me. I like the “big band” or orchestral stuff when being taught how to do something, whether for art stuff or for game tutorial stuff. It’s the least distracting music for me.
