it got to the point in which I ignored all the gems and just tried to get as many turbos as I possibly could

The game idea is quite nice - but as you probably can see it takes tremendous amount of time to finish all of the details...
Maybe it would be easier for you if you simply made it into a survival - and gradually spawned harder and harder enemies based on score. Then you could remove some interfaces / simplify the code...
This was actually the plan for a while when i was developing.
