How many prestige points should I stockpile? What should I buy first? How much of stuff should I have stockpiled?

That's up to you really. My first prestige was done with a few hundred thousands logs and a few dozen thousand ores, on a reincarnation that I don't need anything from (I'm doing a challenge next anyway) which allowed me to burn the mana cap to instantly regain some of the lost buildings and then keep on doing it for a few hours to get more of them back. At the time I'd only gained 266 points, which let me get a 10% discount for the plaza buildings, but one thing that is of importance here is that there's two unlocks that you get for prestiging, one at two and one at five, the latter of which is a big help if you can get the resources for it.
A part of it is how much other stuff you have, like the building cost upgrade from the battlefield because having that one high enough is probably instrumental here.

The first prestige really should be for 250+ perks because then you can buy the gathering resources generator for 250. It is extremely helpful and help you get back your plaza buildings quicker from more resource generation.
After the first prestige, the next one or two should be enough to max out plaza building cost reduction, to allow you to rebuild quicker as well.
Past that, trying to hit 5 prestiges asap to unlock the demon market is usually recommended. Lots of great things to get with perks and quite a lot of them may depend on your preference and focus.

I did first prestige with 325 so I could unlock spell Labala aswell as dungeon. Labala spell has quite a long cast, so yes I benefitted, but not all that much. The importen thing about prestiging is being ready to rebuild again immediately, plaza bonuses are massive, and going for a period without bonuses you had will impact everything a lot. Mind you, labala gives increased fishing mastery, and level 28 fishing is needed for the drop/rarity food I believe(not there yet only 27).
I believe I just did 8 prestiges extra today, bringing me from 5 to 13. Which is area I will stay on until I reach next demon market I suspect.
Investing in generator, challange, dungeon and spell is highest priorty. You should get there in first 3 prestiges. Or if you stretch directly for 5 prestiges. I tried to focus on other progress, challanges and xp uniques until I had sz5 items before going for higher demon markets and further prestiges.
Next item on to invest in list should be price reduction for plaza, after that it is various ways to upgrade your battlefield which is considerably cheaper than what comes after. The fishing rod for 600m xp is a cheaper timewise investment than perk point rod, and either one is exchanged out by z12 fishing rod anyway.
Mana invested in plaza will be a limiting factor, so having done all the challanges up to blade storm 3, air elemental 2 and farmers life 2 seems a logical step. The 16b xp unique will not be very hard to go for when you have created a decent plaza either (level 15, 15, 10, 10 in tier 3 and tier 4 will be nice). Personally I give dungeon a little extra focus, every one of the dungeons, just to make sure it is never a limiting factor for progress.
