I totally overlooked that during my run of Farmer Life 1 as well. Nowhere where I would have logically expected to see that information on display had it. And I found out later after I had already finished that run, and before I got around to starting the 2nd run, that the progress information was only visible while viewing the spell / conjuring / demons / town tabs and it was displayed in the box that displayed a countdown timer until the next autosave. This was before they added quests though, and with quest information being in that place on the screen now I don't know what that did for the Farmer Life progress counter...
EDIT: I just took a peek at Farmer Life 3 (reloading my save after this since I didn't intend to start it yet at this time) and the counter for this challenge's progress is now displayed underneath your count of how many souls you have.
