With the weekly challenges targetting different enemy types I find myself constantly trying to remember (or figure out) which maps and quests are best to find those enemies. I am hoping that someone has started a list of where it is best to find the different types of enemies.

They're part of the Patron system, so you can read about it at the bottom of the FAQ there.
In particular, some patron challenges read something like *Defeat 1000 humanoid enemies in Mirt variants or free plays* (awarding 250 of Mirt's ruby coins), which raises the question in this thread of how to quickly find those kinds of enemies for when the player doesn't want to waste time with patron restrictions or when the challenge timer is close to running out.
If I understand it correctly, those monster-type challenges (two or three per unlocked patron) are different for each week and each player. For me, finding and farming single areas with the required enemy type doesn't take too long anyway.
