What does "an attack" precisely mean in equipments ?
Example : "After each attack, boost a random stats by 5%"
If there are several, when does an attack start or end ?

Yes, does attack mean 1 round of attack, or each time a weapon is discharged? Also curious about how thorns work, though I suspect the answer is that you take damage each time you make a strike.

Think of it as each bullet. Frigate fires 1, fighters 2, and interceptors are tricky.... Their attack deals damage 3 times, so we generally think it counts as three seperate bullets, but I don't think it's been confirmed.
Thorns deal that value of damage to an enemy ship every time that enemy ship does damage to it.

I always assumed am interceptor did 3 attacks per hit from what people said. I've always felt that in practice though it might only count as one attack. This is only based on me running different set ups and seeing whay happened rather than any exact experimentation. When using only a few interceptors in a set, to slow the enemy front line, using 400% first strike had a much bigger impact than you would expect if a hit was 3 attacks. Using it in these kind of sets was much better than 20% overload or 4% increase overload. I do reiterate though, thats just a feeling and not based on any real evidence.
