The Pet Token description in the game says:
"Pet Tokens can be used to unlock new pets, to decrease the evolving cost, or to add extra growth to pets."
However i can't figure out how to do the "decrease the evolving cost" option and a bunch of searches have turned up nothing useful so far.
I decided to take Ryu's advice and sacrifice Valkyrie's and Elephant's growth boosts in order to make them Defenders. However it's probably going to be at least 2 months before i've got 2000 boss wins for Valkyrie, and the 300 Defense requirement for Elephant is probably even further in the future, so I decided to buy a Pet Token and try to evolve the Elephant early.
But when i try to evolve the Elephant i still get the error message about not having enough growth or fire stones. (I'm unsure why it doesn't also say i don't have enough defense, since the Elephant is only at 74 now.)
If i try "Use Token" from the "Normal" tab it just offers wo increase its growth and doesn't mention anything about evolution costs.
So what's the trick?

I've never tried this myself but from what I can remember (and can't find), a pet token only lets you bypass the special requirement (300 defense or 2000 bosses) and not the growth or material requirements.

Ahh! That would explain the weirdness of the error message then, so that's probably it. Thanks!

Yes at first, in the beta, a token also skipped the growth and material requirement but then people complained it is p2w and I changed it so a token doesn't do too much anymore. It can still be good for some pets to skip the special requirement, especially the UAC for turtle.
The token doesn't work for all pets, though. You can't use a token to skip the special condition for Book, Pandora, Cloud, Ape, Goat, Gold Dragon, FSM, Undine or Lucky Coin.
