Is it based on stop watch mode? Total distance travelled? I'm not seeing mine change at all and I'm just curious

It's determined by the record maximum distance travelled. The furthest you have ever gotten, not a cumulative total. Stop watch mode distance has a seperate highscore, though I don't think any of the highscores other than max distance still work.
The highscores can take a little to update so even if you are certain that you reached a new record (you should be seeing a big red arrow that says 'NEW RECORD!' and then your new distance in meters) it will not update immediately, though usually it happens fairly quickly. Just make sure to reload the highscores.
If you aren't getting the arrow then you aren't past your old max record. Most likely you timetravelled and are still in a lower rift (therefore shorter distance). Once you get back up to your previous max rift you will be able to top your old record.

Addition: It appears that a new record will not register unless you actually stop somewhere in the field (cake wall counts too, just don't break completely through to the next rift). After going past my old record rift I timetravelled before getting stuck in the cakewall. Essentially I kept breaking through to the next rift until I hit my new max rift multiplier and timetravelled immediately afterwards. So this another reason why the maximum distance highscore might potentially not change.
