Maybe I'm dense. Can't figure out how to 'catch' the gummy after hitting the pair for the first time. Timed clicks, clicking like a spaz, not clicking at all... I got nothing.

I've had hard times figuring out how to catch it too but I succeed each time : just click as fast as you can anywhere on the game screen.

This is gonna sound mongo but try this: flick your tongue as fast as you can onto the gums behind your front teeth, like you were saying "laddle-addle-addle-addle......." while you click as fast as you can. For some idiot reason it seems to help your fingers from missing clicks. It's dumb but it works for me.

Maybe it's bugged for me or bugged for you, but for me it's pretty easy. I just spam click and that's it. The "balloon" gummy smashes into the ground gaining speed each time I click, destroying everything in it's way, and I always catch the spiky one.

I managed to get the spiky one, but after that sometimes he goes up to the sky, how can I get him to reach the sky?

Once you catch the spiky bear, you're done - enjoy the ride.
Basically, he's a bear in a costume with spikes on top, riding one of those thick rubber bouncy toys with a ring on top like you might see in some toy stores. Maneuver into him and you steal the bouncer and he leaps forward and is trying to run from you, while you madly bounce after him. You bounce (as if power slamming) and gain ground every time you click. If you don't click, you just bounce higher, as if you are your normal character, but you lose ground. If you don't catch up to him, he gets away completely and you just go back to normal. If you do catch him, his costume pricks the bouncer, bursting it, and causing it to shoot randomly into the air (always forward, thankfully) until it deflates completely and you now have a speed boost and possibly a height boost as well.
That's not the only think that makes Prickly awesome. When you start to chase him, he always tosses a money bag in the air. You should stop spamming click when he does, letting you bounce high enough to catch it. It seems to be worth a lot - 3500 or 7000 at level 1, and at least 30000 at level 2.
If you get good at using the bouncer, you can sometimes pick up other bears in the area, particularly wannabears for extra slams, or occasionally Wormageddon (which will switch you to that minigame).

its almost impossible to get him normally so i suggest using an autoclicker to catch him... only reason to use one in this game too
