Like the No Equipment challenge, Basic challenge, etc. What are the challenges and their requirements? Is there a complete list somewhere?

The complete list is in the "challenge" sub-menu accessible from your rebirth screen.
It also lists their unlock condition, clear target, rewards and special rules so for the specific refer to that place.
On a more basic level challenges (except laser sword challenge) reset your NUMBER to 1 and asks you to defeat a specific boss.
The basic challenge does not have any special rule, it's just "climb back to defeat boss 58" but every other challenge has its own twist.
The no equipment challenge temporarily negates all stats and bonuses from equipment, the 24h challenge fails you if you don't reach the target boss in 24 hours, the 100 levels challenge only allows the first 100 levels in total except basic training per rebirth (for example 20 on time machine, 20 on augments, 20 on blood magic and 20 on wandoos only leaves you with 20 levels remaining to distribute)...
A rule of thumb is "don't do challenges unless you need their reward right now", the further you are in the adventure zones the better your gear will be and usually the better your base energy and magic stats will be as well (on top of all of the permanent bonuses from the various features you unlock along the way), allowing you to get through the challenges significantly faster.

I think if you move the mouse over any challenge it displays the information about it regardless of whether or not you've unlocked it? (Been a while since I still had any that were still locked.)

11 challenges: Basic, No Augment, 24 Hour, 100 Levels, No Equipment, Troll, No Rebirth, Laser Sword, Blind, No NGU, and No Time Machine.
Most of the unlock conditions are tied to bosses 58 and 75, each of the first 4 titans, and levels in the NGU feature. You'll also want to complete a basic challenge in under 24 hours and you'll want to make 1 laser sword augment with 1 upgrade.
All of those 11 challenges exist in evil difficulty as well and have separate counters / separate rewards from normal difficulty. (It's not listed on the wiki but I think sadistic difficulty has copies of them all as well? I'm not that far yet myself though so I don't know for certain.)

The problem with waiting until you need something, is building back up to where you left off. Though admittedly, that will be easier also as time goes on and progress is made, so take it with a grain of salt. Just that there's a frustration with saying you're at Zone XYZ, and you do a basic challenge to get the stat bonuses. Now you have to climb back up to Zone XYZ, and that could be a few days away, depending on how often you play and rebirth. Sure, it won't take you a month like it did before to get there the first time, but in the meantime, you're thinking -- oh why did I ever decide to do that challenge right now??
Repeat that for every time you think you need the reward and redo your number, etc and you can see the frustration.
Some people are OK with a challenge taking 8-24 hours, whereas others want it done in only 1-2 hours. So take your pick.
Also know that you can revert to that save file if you change your mind!
There is an option you can do in this game which many other idle games do not let you do. You can make a save file with your current status, try a challenge, and if you think it's taking you longer than you wanted, then reload the old file and keep going forward.

That's why you rarely just do 1 clear of a challenge and you bundle quite a few back to back so that the climb back is only done once for all of these clears.
It is the main reason why most suggestions about when to do challenges are groupping them in 3, it minimizes the time wasted climbing back while at the same time making sure you have the stats to clear them in a reasonable amount of time.
When you only do 1 clear at a time you can be OK with taking 8+ hours for it but when you need to chain 10+ clears of various challenges you can't really spend over a week for them, it hurts your overall progression way too much.

Basic challenges at when coming to mega land, all challenges that don't raise the boss target and the first few of the others (including at least the third clear of the troll challenge to allow fruits to be upgraded beyond rank 10 as well as as many no rebirth challenges as you can) after getting walderp's cane to level 100 and boosted (the one without bonuses since it is a garanteed drop so it goes pretty fast) and finally finishing whatever is left with the chocolate set.
Of course you can adapt this since it is for example possible to do the first clear of pretty much every challenge right after you finish the basic challenge.
It is also possible to divide them a bit more in order to get some of the rewards a bit earlier.
If you min-max a lot you would do the first basic challenge as soon as you can clear it in a few hours and do the first 24h challenge right after in order to maximize boss exp when that still matters.
But those 3 times are still a pretty good guide line for those that are not sure of when to do them.
