You can do the tailslide by hitting up before it ends, the dolphin will jump up and you can keep your combo.
I found out by checking the instructions.

@KokoroHeart Inaccurate Hitchhikers guide reference, contrary to popular belief, the restaurant isn't actually at the border of the Universe, but at the time when the universe ends. Unless of course the dolphin somehow went near the speed of light, the restaurant is wrong.
