Pokémon is set in a world post-nuclear war. America bombed all of the world, and 200 years later humans emerged and rebuilt. Pokémon are the result of radiation, most mutations were horrific and the animals died, but a few survived. They reverted to laying eggs, as mutations reawakened the stronger traits of the past, before true mammals existed. Many of them look like household materials and have evolved to have psychic powers as survival mechanisms (they were more likely to survive the better they could blend in with human wreckage).

That also explains why they keep finding new ones and new islands… they’re not sure what survived from the before time, and kept the secrets of the past locked away to save future generations from such great sadness. – Some comment off of a meme site
