You unlock titans by beating bosses. They appear at certain points, and I assume they are much stronger than normal adventure enemies.

You presumably fight titans by some way I don't know of, most likely particularly powerful enemies. Try checking the adventure zone menu, there should be enemies' names in the place of zones.
Judging from the number of plays, I see many people wanting to play this game in the future once completed.
