You can access the option to 'retire' a creature by double clicking it and going to the 'status menu' while at the stable (you can't do this outside of the stable) you'll find the 'retire button' at the bottom-left corner of the menu, right above skills.
Note : If you retire a creature after it's reached it's max level, you'll get a free gene splicer you can inject into another critter (injected traits won't be passed to offspring though)
The splicer you get depends on the species of critter retired. Here's the wiki page with a list of traits, what they do, and where you can get them from.

If I get two samples of the "quest critter', can I ever use the extra sample after I've given the Downtown Dude the 1st sample?

Ever consider making a prequel where the player gets a lab to engineer freakish creatures in to fight in the arena? (Hey these things have to come from somewhere)
There needs to be an "end run" button or something, because after a certain amount of upgrades YOU WILL NEVER STOP BONCEING IN PLACE even after you've lost all altitude and momentum and you'll just sit there waiting for the little armadillo to stop bouncing so you can go to the upgrade screen already. :p
anybody else having problems with the 'frog on a log' bit because the key board command "stick' and cause the frog to run off the log uncontrollablely?
Anybody else think some of the new special infected would be great in Infectionator 3? The Bolt and the Charming would definitely be useful for getting the last few guys that like to hide in the corners. :)
Anybody else getting a glitch were the arrow keys seem to 'stick' casing you to keep moving in a certain direction in the map even if you press the opposite key?

Anybody else notice that in Undead Mode, the zombies use the same sounds from The Last Stand : Dead Zone? XD Not sure if that was laziness on the part of ConArtist to reuse sound from one of their other games, or f that was intended as an Easter egg.
Needs to be resized, part of the game screen is cut off in both regular and cinematic modes. Hate it when I can't even start a game because I can't see the whole screen

Yet another potentially great game rendered unplayable because it won't fit in the screen and it's buttons are unclick-able I both regular and full screen mode. :,(
