I think that high scores are only registered when you reset your progress, by clicking the wrench icon in the corner and hitting "reset". The score is the quality of your pick.

@zambezi after you reach the pay cap, saving up to buy a stable and horses can give you a nice source of income. For every race you win, you get 100, for second you get 50, and for third you get 25. You usually only have to wait 2-3 days for them to get to full energy, which is the best time to race.
