to beat the minotaur you have to realise that he only makes more heads if any ONE head is killed. so if you dont kill the first 2 heads present , you effectively block his power.
do ranged attacks at the hydra while keeping your team alive. once you kill the hydra the match is won, dont have to kill the heads
