It doesn't count any 2 word letters, but I think that was due design. It also doesn't recognize any country names, although it do recognizes some people names and Texas...
Level 30 speed bird is very hard. Start of by jumping through the first 2 balloons, go over the first blades, fell through the spikes and hit the balloon below. Then fly over the 2 blades at the same time, land on the side (not on the top) of the balloon so that you will not jump too high. You should be able to reach the last balloon of the row without touching the middle one or double jumping. Try to hit the side of the balloon, so that you don't jump too high and wast time. Land on the green block on the left, double jump before hitting the balloons on the bottom and get to the balloon by the side of the wall of spikes. Use the balloons to go over it, double jump before hitting the bats, reach the next balloons, repeat that until the level is over. That should do it :)
